Preparation
1 Pineapple skin and core
1 to 2 Cinnamon sticks
4 Cloves
2 Allspice
1 teaspoon freshly grated ginger
1 teaspoon freshly grated turmeric
2 to 3 star anis legs (optional)
(optional) 4 tamarind peeled and deveined
Instructions:
Wash pineapple skin thoroughly before peeling the pineapple. In a pot add the cinnamon, pineapple skin and core, and tamarind veins(optional) and fill with water until skin is fully covered - usually its about 2 ltrs (8 cups) of water. Place on stove and cook at medium heat and bring to boil. Once it has boiled, add the rest of the ingredients, cover with a lid and boil for 5 more minutes. Remove from heat, do not remove the lid and let it sit for about 15 to 20 mins. It can serve hot or cold.
